One of my favorites is El Conquistador Resort and Spa in Puerto Rico.  Much of the resort is situated on the coastal mainland, but the resort also includes a 100 acre private island. Located in Fajardo Puerto Rico this Caribbean resort (not all inclusive) the resort features a water park and a kids club.
